The winery "Il Sogno" (Engl. The Dream) is located in the municipality of Mombaruzzo (province of Asti) in the Italian region of Piedmont. It was founded in 2015 by Rudolf Längauer. Vincenzo Muni is the oenologist. Two junior suites with pool are also rented out. The wine cellar is partly underground and the building constructed on top of it was built according to the greatest possible ecological principles with 50 cm vertically perforated brickwork, wooden aluminium windows with thermal glazing and the greatest possible insulation in the roof area. The electricity is supplied by a photovoltaic system, the heating by geothermal energy and the water supply partly from the local water network, service water from a rainwater cistern and from our own well.
The vineyards cover 2.4 hectares and are planted with the red wine varieties Merlot, Freisa, Barbera and Syrah, as well as the white wine variety Cortese. If necessary, 500 to 900 kg of grapes are purchased for the Barbera d'Asti BIO. Since the 2018 vintage, the vineyards have been cultivated according to organic viticulture criteria certified by Valoritalia-IT-BIO-015. These include, for example, fertilisation using humus produced by the winery itself from green cuttings, horse manure and pomace, as well as compost tea and active microorganisms. The yield is limited to a maximum of 2,500 to 3,000 kg/ha.
The grapes are harvested by hand in small cassettes. Gravity is used to gently process the grapes. Fermentation takes place with the vineyard's own yeasts, which are extracted from the grape skins and propagated. Sulphur is avoided as much as possible and inactive yeasts are used to stabilise the wine in the barriques. The must is fermented in open 1,200-litre stainless steel tanks with constant underpushing and over-spraying of the must by hand. The gentle pressing process takes place at only 1.2 bar. After two to three years of barrique ageing, the wines are stored in the bottle for another one to two years before being marketed.
The product range includes DOC wines Cortese dell'Alto Monferrato, Monferrato and Freisa d'Asti, as well as DOCG wines Barbera d'Asti and Nizza. The premium wines are DOC Monferrato "Quattro per Tre" (the best barrel of each cuvée of Barbera, Merlot, Syrah and Freisa is blended after 2 years of ageing and matures for another year in barrique), DOC Nizza Barbera (the 3 to 4 best barrels of Barbera age for 3 years in barrique) and DOC Cortese dell'Alto Monferrato "Il Bianco"(single-varietal Cortese 1 to 2 years in barrique). The label is redesigned every year by an artist. Between 4,700 and 7,000 bottles of wine are produced annually. Of these, 80% are exported to Austria and Germany.
