The winery is located in the municipality of Léognan in the Pessac-Léognan area of Graves (Bordeaux). Both white wine and red wine are classified as "Cru Classé". The origin goes back to a landed estate in the 12th century. Through the marriage of a Pierre Pernel with a daughter of the Lord of Olivier it received its present name. After several changes of ownership, the estate was acquired by the Bethmann family in 1886. For over 70 years it was managed by the Eschenauer trading house for the owners, before the family took over the management again in 1981. Today it is managed by Jean-Jacques de Bethmann. The total estate covers 220 hectares, of which only 50 hectares are planted with vines. That is 38 hectares with the red wine varieties Cabernet Sauvignon (45%), Merlot (45%) and Cabernet Franc (10%), and 12 hectares with the white wine varieties Sémillon (55%), Sauvignon Blanc (40%) and Muscadelle (5%). The red wine is aged for 18 months and the white wine for three months in barriques, one third of which are new. The second wine is called "La Seigneurie d'Olivier du Chateau Olivier".
