The winegrowing company is based in the municipality of Trento (Trento) in the Italian winegrowing region of Trentino. It all began in 1950, when a few winegrowers founded a winegrowers' cooperative. It was not until 1957 that the production of their own winery and the marketing of the wines began. In 1964, the headquarters were built in Ravina di Trento, and from 1977 onwards they were expanded to reach the current size of 80,000 square metres over the years. As a second-degree cooperative, Cavit has no owner, but members consisting of winegrowing families united in a cooperative. The company's goal is to promote the culture of quality wine in Trentino. The production volume is about 60% in Trentino. Cavit unites eleven winegrowers' cooperatives, which include more than 5,250 winegrowers with a total cultivated area of 6,350 hectares spread over the entire regional territory. From harvest and delivery of the grapes to marketing, Cavit controls the entire production process. Around 200 employees support the member wineries. Through further training and assistance to the winegrowers, the way is paved for the most advanced cultivation techniques. The management team consists of Lorenzo Libera (president), Enrico Zanoni (managing director), Andrea Nicolini (export director), Andrea Faustini (oenologist and scientific director of the agronomic team), Fabrizio Marinconz (oenologist and winemaker) and Paolo Turra (oenologist for sparkling wines).
The production process follows the PICA system (Piattaforma Integrata Cartografica Agriviticola) with the aim of intelligent and ecologically sustainable viticulture. The project was launched by Cavit in collaboration with two research centres to ensure the best possible management and yield. This system of precision viticulture allows control of the entire production chain, from the vineyard to the product in the bottle. The grapes come from different growing areas with different soils, ecosystems and climates. The area can be divided into five macro-climates, which are Cembra Valley, Adige Valley, Rotaliana Plain, Vallagarina and Valle di Laghi. The white wine varieties Chardonnay, Müller-Thurgau, Nosiola, Gewürztraminer, Moscato Giallo (Gold Muscat), Pinot Grigio (Pinot Gris), Pinot Bianco (Pinot Blanc) and Sauvignon Blanc are cultivated, as well as the red wine varieties Pinot Nero (Pinot Noir), Schiava Grossa, Schiava Gentile, Merlot, Cabernet Sauvignon, Lagrein and Marzemino.
Cavit's production is SQNPI certified (Sistema Qualità Nazionale Produzione Integrata - National Quality System for Integrated Production). The member winegrowers have joined this quality system for integrated production (KIP). The cultivation is carried out according to the guidelines of the Integrated Plant Protection. In addition, Cavit has a number of organically cultivated vineyards and the winery is certified for the processing of organic wines. In addition, all white wines are also suitable for vegetarians and vegans. Every stage of wine production is accompanied by specialised staff and computer-based internal laboratories for analysis and quality control. The winery has a storage capacity of about 300,000 hectolitres and one of the most modern mechanical bottling lines in the world. Fully automated and run by robots, it is powered by photovoltaic panels in a CO2-neutral way.
The product range includes wines from the DOC areas Trento, Trentino and Teroldego Rotaliano, as well as the IGT area Vigneti delle Dolomiti. The sparkling wines DOC Trento, produced by means of Metodo classico, are produced in the "Cantina Altemasi" winery, which went into operation in 1993. Under the "Maso" product line, wines from special areas (crus) are produced in collaboration with the San Michele all'Adige Wine Institute. The "Trentini Superiori" product line includes wines from a selection of the best vineyards. The premium wines are DOC Trento "Altemasi Riserva" (Chardonnay and Pinot Nero, disgorgement after 68 months), DOC Teroldego Rotaliano Superiore Riserva "Maso Cervara" (30 months in barriques and wooden barrels, 6 months in bottle) and DOC Trentino Superiore "Rulendis" (Pinot Grigio). About 65 million bottles are produced annually. Around 80% is exported, the main customer countries being the USA, Great Britain and Germany.
