The winery with the full name "Cavallotto Tenuta Vitivinicola Bricco Boschis" is located in the municipality of Castiglione Falletto (province of Cuneo) in the Italian region of Piedmont. It was founded in 1928 by Ciacomo Cavallotto and continued from 1946 by the two brothers Olivio and Gildo Cavallotto. Since the end of the 1980s, it has been run in the fifth family generation by Olivio's children, namely Laura, Giuseppe and Alfio Cavallotto. The vineyards cover 25 hectares of vines in the two historic sites of Bricco Boschis and, since 1989, Vignolo. They are planted with the red wine varieties Nebbiolo (about 50% of the stock), Barbera, Freisa, Grignolino and Pinot Nero (Pinot Noir), as well as the white wine varieties Chardonnay and Dolcetto. The yield of Nebbiolo (for Barolo wines) is limited to a maximum of 38 hectolitres/hectare.

Cavallotto - Weinberge

The planting density is 5,000 vines/hectare. The environmentally friendly, sustainable cultivation is carried out according to the rules of an integrated agricultural concept. This includes a year-round cover crop as well as the complete renunciation of pesticides. Instead, predatory mites are used to control pests. After fermentation in stainless steel, Dolcetto and Freisa are put into concrete tanks for malolactic fermentation, while Barolo, Nebbiolo and Barbera are matured in traditional large wooden barrels made of Slavonian oak of various sizes with volumes ranging from 20 to 100 hectolitres. The product range includes the DOC/DOCG wines Barolo, Barbera d'Alba, Dolcetto d'Alba and Langhe. Premium wines include Barolo Riserva Bricco Boschis Vigna San Giuseppe and Barolo Vignolo Riserva.
