The winery is located in the municipality of Rüdesheim-Eibingen in the German wine-growing region of Rheingau. Its origins date back to the 11th century. The monastery cellar dates back to 1683. The business was created in the 1980s from the former Rüdesheim parish estate. Finally, in 2009, a limited liability company was founded, which is 100% owned by the Limburg diocese. Silke Trick has been the managing director since 2011, and Peter Perabo has been the operations manager and cellar master since 2007. The vineyards cover nine hectares of vineyards in the single vineyards Berg Schlossberg, Berg Roseneck, Berg Rottland, Bischofsberg, Magdalenenkreuz and Klosterlay (Rüdesheim), as well as Hölle(Johannisberg). 80% of the vineyards are planted with the Lewit variety Riesling, the rest with Pinot Noir. The vineyards are cultivated in a natural way with ecological/biological pest control. Quality criteria in the vineyards are yield reduction and selective manual harvesting. Spontaneous fermentation is used in some cases. The Riesling is also matured in traditional large wooden barrels. The red wines are bottled after maceration and maturation without filtration. The premium wines include Riesling Berg "Episcopus" and Riesling Roseneck "Alte Reben". Around 50,000 bottles of wine are produced annually. Marc (pomace brandy) is also produced from Pinot Noir.
